"Cream" Filled Crepes with Fresh Fruit


Crepes:

4 bananas
1/4 c lemon

I blended the bananas and lemon juice in my Blendtec until smooth and then poured pancake size circles onto my dehydrator 1/8 thick.  I dehydrated the "crepes" for about 8 hours on 115 degrees.  After peeling them off teflex sheets, I stored them in an airtight container on my counter overnight.

Creme Filling:

1 cup cashews (soaked overnight)
1/2 cup water
1 tsp vanilla
2 Tbsp Agave

Blend until creamy (approx 30 seconds in my Blendtec)

Fruit Filling:

I used fresh white peaces, blueberries and kiwi because it's what I had on hand.  I am sure this would be delicious with strawberries and/or raspberries.

My only complaint is that the banana crepes do taste like bananas.  I am not a fan of banana but despite the banana taste, these crepes were quite tasty.  Will definitely make these again.

Raw Taco "Meat"

1 c almonds
1/2 c sunflower seeds
1 1/2 tsp cumin
1 tsp chili powder
2 tsp Bragg's
1/2 tsp cholula
3 Tbsp water
1/2 tsp sea salt

Pulse until chopped to ground beef consistency. Do not over blend or your "meat" will become mushy.

I used butter lettuce wraps filled with homemade salsa (tomato, onion, green pepper, jalapeƱo, lime juice) red, yellow and orange pepper.

Maca Powder = Sexy Time ???

So, this article claims tht Maca Powder acts as an organic Viagra. Intriguing. I have to try it.


{recipe} MALTED MILK
2 cups Super-Easy, No-Measure Almond Milk
2 tsp maca powder
1/2 tsp mesquite (if you have it on hand)
1 tsp liquid vanilla
date paste, agave, or coconut nectar to taste
Blend with a few pieces of ice (just to keep it cold as it blends) or add everything to a bowl then funnel into a glass bottle and shake, shake, shake!
{recipe} MALTED MILKSHAKE
2 cups Super-Easy, No-Measure Almond Milk
1 T maca powder
1/2 tsp mesquite (if you have it on hand)
2 tsp liquid vanilla
3 frozen bananas
Blend!
{recipe} CHOCOLATE MALTED MILKSHAKE
2 cups Super-Easy, No-Measure Almond Milk
1 T maca powder
1 1/2 T cacao powder or carob powder
1/2 tsp mesquite (if you have it on hand)
2 tsp liquid vanilla
4 frozen bananas
2 t cinnamon (optional, highly recommended with carob)
date paste, agave, or coconut nectar to taste if additional sweetener is needed
Blend!

Juice Pulp Crackers

I tried 2 different versions of this recipe.  Both are posted below.

Juice Pulp Cracker Version 1

2 cups of juice pulp (celery, cucumber, carrots,)
1/2 c ground flax
3 TBSP Braggs Amino Acid
1/2 tsp dried parsley
1 tsp curry
Ground black pepper
1/2 cup water

Blend and spread on teflex sheet.  Right now this has a dark green color.

Juice Pulp Cracker Version 2


2 cups of juice pulp (carrots, beets)
1/2 ground flax
3 TBSP Braggs Amino Acid
2 TBSP Organic Seasoning (costo brand mixed)
1/2 cup water

Blend and spread on teflex sheet.  Also in the dehydrator as we speak.  This one has a rich red color.  We will see....

Mexican inspired Raw Crackers

This was made using leftover juice pulp and some homemade raw salsa that needed to be used before it went bad.  The crackers are in the dehydrator now.  I will come back with the verdict.

2 cups juice pulp (carrots, celery, chard, spinach, cucumber, beets, apple, ginger, lemon)
1/2 cup ground flax
1 cup salsa (tomato, cilantro, onion, lime juice, jalapeno)
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp cayenne
1/2 cup water

Add to blender and mix adding water as necessary.  The consistency was paste-like.  I spread it out on the teflex dehydrator at 9pm.

We will see......

Raw Cheez-Its

I love Cheez-its.  They are my weakness.  I could eat an entire box in one sitting and might have done it more than once.  I am on a quest for a healthier alternative to my sinful pleasure.   Below is a recipe I found on the Raw Food Living site am looking forward to try.


Cheeze Its
I found this recipe on the Raw Food Talk forum. This is truly one of the best cracker recipes that I've found!
Although they have the color and texture of "Cheese Its", I wouldn't say that they taste "exactly" like them. They ARE very good though!
Ingredients:

  • 1 cup sunflower seeds (soaked 4 hrs and dehydrated)


  • 1 cup Brazil nuts (soaked and dehydrated)


  • 1 cup almonds (soaked and dehydrated)

  • Red Pepper
  • 1 big tomato


  • 1 cup red pepper, diced


  • 1 tsp cumin


  • 2 tsp salt


  • 1 Tbsp taco seasoning


  • 1 tsp onion powder


  • 1 tsp garlic powder
Directions:

  1. Process all ingredients and spread on teflex or parchment paper. They can be as thin as you like.


  2. After a few hours score with a knife or pizza cutter and leave until dry on top.


  3. Flip over and leave until crispy. Approximately 8 - 12 hours depending on thickness.

    Raw Tzatziki Sauce Recipie


    Tzatziki, or dill-cucumber sauce, is the perfect companion to many delicious Greek dishes. This raw version uses nuts in place of the dairy to create a rich consistency and good flavor.
    Ingredients
    1 cup cashews, soaked 8 hours or overnight
    1/2 cucumber or 1/2 cup juiced cucumber
    3 tablespoons lemon juice
    1/2 cup fresh dill, chopped finely
1/4 cup fresh mint, chopped finely
    1 clove garlic, minced
    Pinch of sea salt and ground pepper
    Water
    Preparation
    Process cashews and lemon juice in food processor to a paste. Add cucumber, dill, mint and garlic and process again until very smooth, adding water as necessary to make a creamy consistency. Stir in salt and pepper to taste.
